How do I answer 'why do you want to work here' in a café interview without sounding fake?

Owners are asking a different question underneath: will you still be here in six months, and will you care about the coffee when it is busy? Answer that, specifically, and you can be honest.

A structure that works in thirty seconds:

1. One specific thing about their shop. Not "the vibe". The roaster they use, the machine, that they do filter, that they were busy at 8am on a Tuesday when you walked past. It proves you looked.
2. One thing you want to get better at that they can give you. "I have done a year of volume; I want to learn filter properly and you run a brew bar." Owners love hiring people they can teach.
3. How long you plan to stay, honestly. "I am here for at least a year" is a great answer. "I am on a working holiday until March" is also fine if you say it; they will plan around it and respect you for it.

Things that sound fake and why:

• "I am passionate about coffee." Everyone says it. Say what you did last weekend with coffee instead.
• "Your shop is the best in the city." They know their own reviews.
• "I want to grow with the company." Unless it is a chain with a career ladder, this is empty.

Things that sound real:

• "I tried your Colombia last week and it tasted like…"
• "Your listing said you open at 6:30 and I am a morning person; I have opened for two years."
• "I want to learn to dial in properly. My last shop had one recipe on the wall and nobody touched the grinder."

And ask them something back. "What does a good first month look like here?" tells them you are thinking about staying, and tells you whether they have thought about you.
