Bread Baker

Bread Bakers at Red Hen are engaged in all aspects of making long-fermented bread from scratch. This role involves working with natural and yeasted pre-ferments, mixing and fermenting dough, hand-shaping loaves, proofing, scoring, and baking bread in a hearth oven. Bakers are expected to learn and uphold Red Hen’s standards of quality while working efficiently in a fast-paced, team-based production environment. Bread production spans multiple stages and shifts. Over time, full-time bakers are expected to gain proficiency across the full bread process so they understand how each stage contributes to the final product. Full-time bakers typically work four 10-hour shifts per week.

Core Responsibilities
Prepare and manage natural and yeasted pre-ferments
Mix final dough using spiral mixers
Monitor dough during bulk fermentation, including folding and timing
Portion and hand-form dough into individual loaves
Manage proofing and readiness for bake
Score and bake bread in a hearth oven
Safely operate equipment and machinery used in bread production
Work collaboratively with the bread team to meet daily production, quality, and efficiency standards

Pay & Growth
We believe in paying for skill and growth. Bakers typically start between $17.50 – $19.00 per hour, with clear opportunities to increase pay as they develop proficiency and consistency in the role. Core bakers earn $20.50 – $24 per hour, and our most experienced team members can earn up to $28.00 per hour over time. Pay is based on prior experience, demonstrated skill, and progression toward proficiency. Advancement into the core range reflects consistent quality, efficiency, and the ability to work independently across bread production.

Physical Requirements
Ability to stand for the duration of a shift
Frequent walking throughout the bakery
Repetitive use of hands, wrists, arms, and back
Ability to lift and move up to 50 lbs repeatedly during a shift
